Vegan Eggnog

2 Pkg’s Silken tofu, firm
2 cups soy or almond milk
1 Tbsp. vanilla extract
¾ cup pure maple syrup
Pinch salt
½ tsp. nutmeg

Combine all of the ingredients in a blender and blend until smooth. Chill for at least 2 hours to allow flavors to marinate. Serve with nutmeg lightly sprinkled on top, if desired.
